BAKED SWEET POTATOES





BAKED SWEET POTATOES (Paleo)

Small sweet potatoes (make extra for leftovers)
Grass-fed butter or ghee (clarified butter)
Sea salt
Freshly ground pepper
Cinnamon

* Heat oven to 400 degrees. 
* Pierce each sweet potato several times with a fork.  
* Place sweet potatoes in a rimmed baking pan or baking sheet lined with parchment paper.  
* Bake until tender, about 50 minutes (larger potatoes require longer baking time).  
* When potatoes are tender, remove from oven.  
* To serve, make a slit in the top of each and top with 1 Tablespoon of butter.  Season with salt and pepper or with cinnamon.  

Allergy note:  If a little bit of butter is not an option for you, try adding a healthy fat like a Tablespoon of mild tasting walnut oil or avocado oil instead.  :)

 * Serve with lean beef, pork, poultry, wild game or fish.
