VEGGIE 8 (CHOPPED VEGGIE MIX)

Make a colorful splash with this Paleo staple!  A healthy combination of 8 vegetables can be prepared in advance and ready for use in a multitude of ways.  Try tossing the mix on top of salads or add some crunch to tacos, mix it into soups, add it to lettuce and meat wraps,  stir-fry with chicken or fish,  bake it in a frittata or saute the mixture and serve alongside your morning eggs. The uses for Veggie 8 are as numerous as your imagination!  You can julienne or chop the veggies into little pieces (depending on your preference.)  Keep Veggie 8 in a sealed glass container in the refrigerator and it will last for a week of meals!




VEGGIE 8 (CHOPPED VEGGIE MIX)
A Paleo staple ready-to-go into soups, salads, meats, wraps and egg dishes. 

1 bunch broccoli
2 stalks celery
2-3  carrots
1/2 small head green cabbage
1/2 small head red cabbage
1 small jicama
1 green bell pepper
5-6 radishes

Wash, dry and chop (or julienne) the vegetables.  Mix together in a large bowl. (If you have some fresh cilantro, toss that in as well!  Delicious!)  Transfer the mix to a glass storage container and keep in the refrigerator for one week, using the mix as needed.
