CRANBERRY SAUCE

Oven Roasted Turkey Breast
Cranberry Sauce
Herbed Green Beans

CRANBERRY SAUCE

3 cups (1 bag) fresh or frozen cranberries
1/2 cup water
1 cup unfiltered apple juice (substitute: organic pineapple juice)
Juice from 2 oranges
Zest from 1 orange
1 teaspoon freshly grated ginger
1 teaspoon ground cinnamon
1/4 cup raw honey

* Wash and sort cranberries (remove any yellow or shriveled berries).
* In a medium, stainless steel saucepan combine all ingredients and bring to a boil.
* Reduce heat to simmer for 20-30 minutes, stirring occasionally.  Cook gently until berries break down and the sauce becomes thick. It will thicken even more as it cools.

Serve with roasted meat and a vegetable.  Enjoy!   
Store leftovers in a covered glass or ceramic container in the refrigerator.
