NO-COOK KETCHUP

This recipe closely mimics the store-bought ketchup 
but without the high fructose corn syrup or added sugar. 
It can be used as a base for Steak sauce, BBQ and shrimp cocktail sauce.

NO-COOK KETCHUP
Paleo and Whole 30 compliant

1 (15 ounce) can organic tomato purée
1 (12 ounce) can organic tomato paste
1/2 cup organic apple cider vinegar
12-15 Medjool dates, pitted and soaked in boiling hot water for 30 minutes. 
 * Drain the water into a measuring cup & set aside. Use softened dates in the ketchup.
2 large shallots, minced (or 1/2 cup minced onion)
1 teaspoon garlic powder
1 teaspoon sea salt
1/2 teaspoon ground mustard
1/2 teaspoon ground cloves
1/2 teaspoon ground allspice
3 Tablespoons maple syrup (omit for Whole 30)

* Mix all ingredients in a food processor or with a hand blender until very smooth. 
* Add leftover date water to thin the ketchup to desired consistency.
* Refrigerate ketchup in a sealed, glass, quart jar.
