ROASTED CABBAGE

ROASTED CABBAGE
Paleo / Whole 30 compliant

1 small green cabbage
4-5 Tablespoons olive oil
Sea salt & freshly ground black pepper
1 large lemon, quartered (optional)

* Preheat the oven to 425 degrees F.
* Line a baking tray with parchment paper.
* Core, trim and cut the cabbage into 8 wedges.
* Brush the wedges on both cut sides with olive oil; place on the baking tray.
* Season the cabbage wedges.  Add the lemon wedges to the tray.
* Roast for 30 minutes, turning the lemon & cabbage wedges halfway through cooking.
* Remove from oven, squeeze lemon juice over the cabbage and serve!
