NATURAL HAM & SWEET POTATO HASH
Paleo & Whole 30 compliant
Serves 1
1 Tablespoon bacon fat, ghee or coconut oil
1 medium sweet potato, cubed (not peeled)
1 cup all-natural, uncured ham (no additives or preservatives), cubed
* Heat a large cast iron or stainless steel skillet over medium heat.
* Add fat and sweet potatoes; allow to cook for 10 minutes, stirring occasionally.
* Add cubed ham and continue cooking. Hash is done when potatoes are lightly browned and tender crisp (not mushy).
* Serve piping hot.
* Refrigerate leftovers in a sealed glass container.
