KICKIN' BBQ CHICKEN
Paleo & Whole 30 compliant
Time saver tip: Purchase a BARE Rotisserie chicken, hot-out-of-the-oven at your local supermarket. Debone at home. Add sauce & you're good to go!
1 whole, free-range chicken
BBQ Sauce:
2 shallots, minced
1 Tbs. coconut oil
1 (12-15 ounce) can organic tomato sauce
1/4 cup apple cider vinegar
1/4 cup organic apple or pineapple juice
2 Tablespoons prepared mustard
1 Tablespoon smoked paprika
1 tsp. allspice
1/2 tsp. ground cayenne or chipotle pepper
Pinch of sea salt and coarsely ground black pepper
* Rinse chicken under cold water adding salt to the cavity to clean well.
* Pat the chicken dry with paper towels.
* Place chicken in the slow cooker, sprinkle with sea salt and ground pepper. Set to cook on HIGH for 3 hours or LOW for 5 hours.
* When done, remove chicken from crock pot and cool until you can safely remove meat from the bone and shred the chicken.
Make ahead BBQ Sauce:
* Combine ingredients in a small saucepan.
* Simmer over low heat for 30 minutes to reduce & thicken. Cool. Pour into glass container. Refrigerate.
* Ready to use: Pour sauce over the shredded chicken; gently stir until blended. Serve!
* Refrigerate leftovers in a covered glass container.
