GARLIC POTATO FRIES
Whole 30 compliant3lb bag of organic red potatoes (or russet potatoes)
8 Tablespoons grapeseed oil, divided
9 cloves of garlic (or 5 TBSP minced garlic)
Pinch of dried parsley flakes or fresh, minced parsley
* Preheat oven to 400 degrees.
* Slice potatoes into long 3-inch slices.
* Line two baking sheets with parchment paper.
* Fill each baking sheet with the strips of potatoes, spread them evenly in a single layer.
* Sprinkle potato fries with grape seed oil and mix evenly with your hands (use gloves!)
* Sprinkle parsley on top of fries and bake for 15 minutes. Gently flip fries with a metal spatula and bake for another 10-15 minutes (until tender when poked with a toothpick).
While the fries are baking:
* Mince garlic.
* Simmer garlic in a small saucepan over low heat with 2 tbsp of grape seed oil. When the garlic is fragrant and lightly browned, remove from heat and set aside.
* Take fries out of oven and use a metal spatula to disperse the garlic throughout the pan. Serve hot.
* Refrigerate leftovers in a sealed glass container. Reheat in a toaster oven or skillet.
** Note: These are family size portions-you can always make more or less if you prefer!
