Sweet & Tangy Meatballs

SWEET & TANGY BBQ MEATBALLS
Paleo compliant / Whole 30 compliant (see substitutions)
Meatballs:
1 1/2 lbs. grass-fed ground beef
1 Tablespoon garlic powder
1/2 teaspoon chili powder
1 teaspoon sea salt
1 teaspoon coarse black pepper
Sauce:
1 cup organic or homemade ketchup (Recipe: Paleo/W30 Ketchup)
2 shallots, finely minced
3 Tablespoons apple cider or balsamic vinegar
2 Tablespoons raw honey (W30-omit honey & use 3 dates, soaked in hot water 30 mins. to soften then drained and finely chopped)
2 Tablespoons coconut aminos
A few shakes of hot sauce

Instructions:
* In a large bowl, combine the ground beef and spices.

* Pull on disposable gloves and gently mix the spices into the beef.
* Use a cookie scoop to measure out even amounts of meat and roll into balls.
* Place meatballs in an 8-inch square baking pan lined with parchment paper.
* In a small bowl, stir together the sauce ingredients.

* Drizzle the sauce evenly over the meatballs.
* Preheat oven to 350 degrees.
