GF CREPES (Free of Grains-Dairy-Nuts)

4 egg whites
1 Tablespoon coconut oil, melted or walnut oil
1/2 cup water
1/4 cup arrowroot or tapioca flour
2 Tablespoons coconut flour
Large Batch: Makes 12 (8-inch) crepes

* In a large bowl, whisk eggs, oil and water or use a blender to mix all ingredients.
* Add dry ingredients and whisk until smooth.
* Heat a small skillet over medium-high heat.
* Add a drizzle of oil.
* Scoop 1/4 cup of batter into the skillet and immediately spread the batter to the edges by tilting the pan.
* Add a drizzle of oil.
* Scoop 1/4 cup of batter into the skillet and immediately spread the batter to the edges by tilting the pan.
* Cook crepe until surface looks dry and the underside is lightly browned, (about 1 minute).
* Flip the crepe over and continue cooking for another minute.
* Transfer crepe to a rack to cool.

* Repeat the process with remaining batter.
* Serve crepes rolled with meat, vegetables, meat candy (bacon) or as a dessert crepe rolled with chopped fruit or Berry Syrup.
** If making a quantity of crepes to enjoy later. Refrigerate leftovers between layers of parchment paper in a covered glass container.
