ROASTED SPAGHETTI SQUASH

Meatballs in Marinara Sauce
Roasted Spaghetti Squash
Salad of Mixed Greens, Pecans and Citrus Vinaigrette

ROASTED SPAGHETTI SQUASH
Paleo / Whole 30 compliant
 
1 medium spaghetti squash
Olive oil

* Preheat Oven to 375°F.  Lightly grease a baking sheet with olive oil or line the sheet with parchment paper.
* Carefully cut spaghetti squash in half lengthwise.  Scoop out the seeds and place cut side down on the prepared pan.
* Bake for 45-60  minutes, or until the squash can be easily pierced with a fork.
* Remove squash from the oven, allow to cool enough to handle safely.
*  Use a fork to gently loosen and remove the "spaghetti strands" from the shells.
* Serve spaghetti squash warm with a drizzle of melted ghee, sea salt and pepper or toss with your favorite herb blend.
