FRUIT TART (Paleo)

A delightfully 'clean-food' dessert for special occasions.

FRUIT TART (Paleo) 
Paleo / Whole 30 compliant

1 1/2 cups walnuts
1 cup pitted dates (softened for 1 hour in hot water, then drained)
3/4 cup unsweetened, shredded coconut
1 tsp vanilla extract
1 tsp. cinnamon
Fresh fruit: Choose 2-4 in season fruits: blackberries, raspberries, blueberries, strawberries, kiwi, sliced mango, sliced pineapple, peaches, nectarines, apricots, etc.

In food processor or Ninja:  Blend walnuts, pitted dates, shredded coconut, vanilla and cinnamon. 
Press crust mixture into tart pan or baking dish.  
Arrange fruit over the crust.  
Chill for 1 hour.
Cut into wedges and serve alone or with a dollop of Coconut Whipped Cream.
