OKRA STIR-FRY

Meal Menu Idea:
French Dip Au Jus 
Okra Stir Fry

STIR-FRY OKRA
Paleo/Whole 30 compliant

1 lb. organic okra, sliced
1 teaspoon coconut oil or ghee
1 clove garlic, minced
1 teaspoon fresh ginger, grated on a microplane
Sea salt and freshly ground black pepper

Optional Mix ins:
Add 1 small onion, chopped
Add a red pepper, diced
Add cherry tomatoes and green onions
Add 1/2 teaspoon turmeric and 1/4 teaspoon cumin
Add a dash of coconut aminos
Add cooked and crumbled natural bacon

* Over medium-high heat, preheat a deep stainless steel wok or cast iron pan.
* Add oil or ghee.
* Add okra, garlic and ginger and stir fry for 3-5 minutes or until okra is tender crisp.
* Remove from heat.  Season to taste with sea salt and freshly ground pepper.
* Serve immediately.
* Refrigerate leftovers in glass, single serving containers for 'Grab-n-Go' meals the next day.
