TURKEY & CHIPOTLE PEPPER STEW

Homemade Vinaigrette

TURKEY & CHIPOTLE PEPPER STEW

1 recipe Chipotle Red Sauce  (Double recipe for a family)
1-2 pounds leftover turkey or chicken, shredded
1 Tablespoons olive oil
1 onion, sliced
2 stalks celery, chopped
fresh parsley
Optional add ins: 
- sliced mushrooms and asparagus
- chopped parsnips & carrots
- turnip and leeks 

* In advance, prepare the Chipotle Red Sauce & refrigerate up to 5 days.  Puree 1/3 of the batch, if desired.
* Preheat a deep cast iron or stainless steel pan over medium heat. 
* Add oil and heat until a drop of water dances in the pan.
* Add onions, reduce heat to medium low and cook, stirring occasionally until caramelized.
* During the last few minutes of cooking; add celery.
* To the pot, add the Chipotle Red Sauce and shredded meat; stir well to combine.
* Simmer for 30 minutes to allow flavors to blend.
* Serve with a salad of mixed greens and a simple vinaigrette.
