SIMPLE BROCCOLI SLAW

Grilled Sirloin Steak
Simple Broccoli Slaw

SIMPLE BROCCOLI SLAW 
Paleo & Whole 30 compliant

1 (12oz) bag broccoli slaw
    or 1 1/2 cups grated broccoli stem and 1/2 cup carrots
1 red bell pepper, cut into matchstick strips
1 apple, cut into matchstick strips
1 bunch green onions, cut into strips on the bias (optional)
1/2 cup golden raisins
fresh parsley leaves, chopped

Combine all ingredients in a large bowl and mix well, making sure to incorporate all of the seasonings.

Dressing
2 Tbs. honey (omit for Whole 30)
2 Tbs. unfiltered apple cider vinegar
3 Tbs. walnut oil
Juice of 1 freshly squeezed lemon
1/2 tsp. sea salt and freshly ground pepper

* Place all ingredients in a small bowl and whisk until smooth.   
* Optional:  Add 1-2 Tbs. Paleo mayo to thicken the dressing.
* Pour dressing over the vegetable slaw and mix well. 
* Serve now or save for later.  It is even better the next day!
