CINNAMON ROASTED NUTS

A Paleo snack lightly roasted with cinnamon and an optional touch of honey. 
We keep a container of roasted nuts in the pantry for a quick 'grab-n-go' snack or to sprinkle over a salad of mixed greens.  The uses for mixed nuts is limited only by your imagination. Yum!

CINNAMON ROASTED NUTS
Paleo and Whole 30 compliant

Small batch:
1 lb. raw walnuts, pecans or almonds
1/2 tsp. cinnamon
1 Tablespoons raw honey or substitute 1 teaspoon real vanilla (Omit for Whole 30)

Large batch:
1 lb. of each walnuts, pecans and almonds
1 Tablespoon cinnamon
1/4 cup raw honey or substitute 3 teaspoons real vanilla (Omit for Whole 30)

* Preheat oven to 350 degrees.
* In a small stainless steel saucepan, heat honey (or vanilla) and cinnamon until melted.
* In a mixing bowl,  pour melted cinnamon mixture over the nuts and mix well to coat.
* Spread the nuts on parchment paper lined baking sheet.
* Toast for 20 minutes until they begin to brown slightly.
* Remove from the oven; allow nuts to cool and dry.  Store in an air tight container.
