CAULIFLOWER RICE



Meal Menu Idea:
Curry Chicken
Cauliflower Rice

CAULIFLOWER RICE
Paleo & Whole 30 compliant
 
1 head of cauliflower
2-3 Tbs. coconut oil
2 cloves garlic, crushed
Black pepper

* Rinse and dry cauliflower. Cut into florets.
* Place raw florets into a food processor and process until they look like grains of rice.  A good blender or a grater can also be used to 'rice' the cauliflower. 
* Heat a large skillet (cast iron), melt coconut oil and add cauliflower 'rice'. Stir often and saute for 5-6 minutes.  
* Add garlic and saute a few minutes more.  
* Add a pinch of black pepper and serve piping hot. 

OPTIONAL ADD-INS:
Spanish: Olive oil (instead of coconut), turmeric or saffron, onion, green and red peppers, chicken, chorizo, seafood.
Thai:  Coconut milk/cream, curry, mustard, chicken, cashews
Chinese: green onions, egg (scrambled), coconut aminos, sesame oil.
