BBQ PULLED PORK

It is Saturday and the family is busy with chores at home and work in the city.  I knew there would be no time to cook!  It is the perfect day for the crock pot.  I filled it early in the morning so it could be slow cooking and tempting us all day long with the wonderful aromas of garlic, smoke and flavorful meat.  The reward for our patience was worth every bite.  You can enjoy Pulled Pork by itself, add a dab of Paleo BBQ Sauce with a Kick or topped it with your favorite salsa.  Try it over a bed of leafy greens or wrapped burrito style in a large piece of lettuce.  Watch out!  Thanks to its simplicity, it may become a family favorite!

BBQ PULLED PORK

1 large onion, sliced
1 Tbs. olive oil
1 tsp. liquid smoke
1 Tbs. paprika
1 tsp. garlic powder
1/2 tsp. ground black pepper
1 (4-6) lb. boneless pork butt or pork shoulder

* Rinse the roast under cold water and pat dry with paper towels.
* Place onion slices on the bottom of the crock pot.
* In a small bowl, combine olive oil, liquid smoke, paprika, garlic powder and pepper. 
* Rub the mixture all over the pork roast and place meat on top of the onions. 
* Cover the crock pot and cook on low for 10-12 hours. 
* When meat is tender and separates easily with a fork, remove it from the crock pot to a cookie sheet.  Discard juices and onion.
* Using two forks, shred the meat.  Mix in your favorite Paleo BBQ sauce and serve. I recommend trying our PALEO BBQ SAUCE WiTH A KiCK!  It is scrumptious!
* Serve the BBQ meat with a vegetable or leafy green salad.  
* Refrigerate leftovers in single serving glass containers for quick grab-n-go meals.
